Question about state channels

When opening a state channel does a certain amount of coin get locked into that channel or can funds be transfered into and out of the users accounts?

Hello. The amount that you want to use in the channel gets locked. You can use the remaining balance.

Thanks. Is it possible to add funds to an existing state channel (one on chain transaction)? Or would the existing channel need to be closed and a new channel opened resulting in 2 on chain transaction?

You can deposit or withdraw funds via on-chain transactions. See the documentation here.
